Butternut Squash and Tomato Pasta

Serves 3
Ingredients
1 Small Butternut Squash
Half a tin of chopped tomatoes
1 Clove of garlic
1 Small red onion
1 Tablespoon of milk
1 Tsp of salt and pepper
1 Tsp of sugar
2 Tsp of unsalted butter
Method
Chop up your butternut squash into bite-sized pieces and put it into a pot of boiling water with the salt, pepper and sugar leave this to boil for 8 minutes or until soft.
Meanwhile, finely chop the garlic, and onion and fry until seethrough in a small pan with 1 tsp of butter.
After the onion and garlic are cooked add the chopped tomatoes and simmer for 5 minutes on low heat.
While this is simmers cook the pasta according to its instructions on the pack.
Once the butternut squash is cooked mash it up with a fork or blend it with a food processor.
Mix the blended butternut squash with the tomato sauce and at the last of the butter and the milk simmer for 5 minutes.
Drain the pasta and mix in the sauce and serve.
