Butternut Squash and Tomato Pasta

Serves 3


Ingredients

  • 1 Small Butternut Squash

  • Half a tin of chopped tomatoes

  • 1 Clove of garlic

  • 1 Small red onion

  • 1 Tablespoon of milk

  • 1 Tsp of salt and pepper

  • 1 Tsp of sugar

  • 2 Tsp of unsalted butter


Method

  1. Chop up your butternut squash into bite-sized pieces and put it into a pot of boiling water with the salt, pepper and sugar leave this to boil for 8 minutes or until soft.

  2. Meanwhile, finely chop the garlic, and onion and fry until seethrough in a small pan with 1 tsp of butter.

  3. After the onion and garlic are cooked add the chopped tomatoes and simmer for 5 minutes on low heat.

  4. While this is simmers cook the pasta according to its instructions on the pack.

  5. Once the butternut squash is cooked mash it up with a fork or blend it with a food processor.

  6. Mix the blended butternut squash with the tomato sauce and at the last of the butter and the milk simmer for 5 minutes.

  7. Drain the pasta and mix in the sauce and serve.
