Delicious One-Pan Baked Chicken Recipe with Tangy Tomato Sauce

Ingredients

  • 1 can of tinned plum tomatoes

  • Half a carrot diced

  • Half an onion finely chopped

  • 1 clove of garlic finely chopped

  • 1 and 1/2 tbsp of dried basil

  • 1 tsp of fresh oregano/ marjoram

  • 1 tsp of rosemary

  • 1 tsp of thyme

  • salt and pepper to season

  • 4 chicken breasts


Method


  1. Pre heat your oven to 180°C then fry the onion in the pan until translucent. Once cooked add in the garlic and carrot and put the lid on and leave it to sweat for a couple minutes.

  2. While that’s cooking add place the chicken breasts on a roasting tin with some oil, salt and pepper to season and a 1/2 teaspoon on dried basil. Once the chicken is seasoned place it into the oven.

  3. Add the can of tomatoes into the pan and stir in the rest of the dried basil, oregano, rosemary and thyme as well as some salt and pepper to season.

  4. Leave that to simmer for 5 minutes then taste and if needed add a bit of sugar for taste if needed.

  5. Leave the sauce at a low heat until the chicken is half cooked which should be about 15 minutes.

  6. Take the chicken out the oven and pour over the tomato sauce over it then place I back in the oven for another 10 minutes or until cooked through.

  7. Serve the chicken with some of the sauce poured over the top and enjoy!
