Spiced Orange Roast Duck for a Perfect Sunday Lunch

Serves 5

Ingredients
1 whole roast duck (around 2kg)
1 tsp of Chinese 5 spice
3 cloves of garlic
2 tbsp of chopped ginger and 3 slices of ginger
8 cloves
2 whole star anise
2 oranges, one juiced, 1 sliced
4 tbsp vegetable oil
1 tsp of nutmeg
2 tsp of black pepper
2 tbsp of salt
Method
Preheat the oven to 200°c
Juice 1 orange.
Mix the Chinese 5 spice, nutmeg, black pepper, garlic, chopped ginger, vegetable oil and the orange juice in a bowl.
Score the duck skin in a crisscross pattern and rub the salt over it in a roasting tin.
Place the 8 cloves, 2 star anise, 3 slices of ginger and 3 slices of the second orange into the center of the duck.
Pour the sauce over the duck in the roasting tin, making sure every bit of the duck is covered make sure some goes into the cavity of the duck to keep it moist when cooking.
Roast the duck for 1 hour or until the duck is cooked all the way through and has a crispy skin.
