Chicken coconut curry.

serves 4
Ingredients
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp garam masala
3/4 tsp curry powder 1/2 if using Simba curry powder
1/2 tin chopped tomatoes
1/2 tin coconut milk
2 or one chicken breasts depending on size.
1 tbsp ground almonds optional
1/2 a red onion
Method
1. Fry onions in a pan with mustard seeds and cumin seeds until onion is translucent.
2. Then add the chicken until white on the outside.

3. Add the garam masala and curry powder and fry for a minute.
4. Add the tomatoes. Then put the lid on and let it simmer for about 4 minutes plus or minus.
5. Add the coconut milk and stir.
6. If after about 5 minutes the curry is liquidly then add in the ground almonds or if you do not have add in 1/2 a tsp of corn-starch.
7. simmer for about ten minuets of until the chicken is cooked and the curry is at full flavor and your dish is ready to serve.
