How to Make Delicious Ginger Mango and Lemon Pastelitos at Home

Serves 10


Ingredients

  • Frozen sheets of puff pastry

  • 2 small ripe mangoes

  • 2 tsp of grated ginger

  • The juice of half a lemon

  • 1/4 cup of granulated sugar

  • 1 mixed egg


Method


  1. Preheat the oven to 180 degrees Celsius

  2. Chop the mango up into small cubes then mix in the lemon juice and ginger into the mango in a bowl.

  3. Cut the sheets of puff pastry into 15cm by 15cm squares if it's not accurate it's fine.

  4. Put 3 tsp of the mango mixture onto the middle of the pastry sheet.

  5. Now fold it corner to corner until you get an envelope-looking parcel.

  6. Then arrange the evenly spaced out on your baking tray and brush with your egg and sprinkle with a generous amount of sugar.

  7. Then bake for 10 minutes of until golden brown


You can serve them with chopped-up fruit or ice cream I did both.
