How to Make Delicious Ginger Mango and Lemon Pastelitos at Home

Serves 10
Ingredients
Frozen sheets of puff pastry
2 small ripe mangoes
2 tsp of grated ginger
The juice of half a lemon
1/4 cup of granulated sugar
1 mixed egg
Method
Preheat the oven to 180 degrees Celsius
Chop the mango up into small cubes then mix in the lemon juice and ginger into the mango in a bowl.
Cut the sheets of puff pastry into 15cm by 15cm squares if it's not accurate it's fine.
Put 3 tsp of the mango mixture onto the middle of the pastry sheet.
Now fold it corner to corner until you get an envelope-looking parcel.
Then arrange the evenly spaced out on your baking tray and brush with your egg and sprinkle with a generous amount of sugar.
Then bake for 10 minutes of until golden brown
You can serve them with chopped-up fruit or ice cream I did both.
