String Bean Coconut Curry

serves 4


Ingredients

  1. 165 ml of coconut milk

  2. 50g string beans

  3. 1 tsp black mustard seeds

  4. 1 tsp cumin seeds

  5. half a large finely chopped white onion

  6. 1 clove of finely chopped garlic

  7. 1 large chopped tomato

  8. 1 tsp curry powder

  9. 1 tsp of chopped green chilli ( you can adjust the amount depending on you spice level )

  10. 10. 1 tsp of ground coriander

  11. 11. a few sprigs of fresh coriander ( optional )



Method


  • Fry the onions, cumin seeds, mustard seeds and chilli until the onion turns translucent.

  • Add in the chopped tomatoes, string beans and the ground coriander stir well and let it simmer for about 3 to 4 minutes.

  • Add the coconut milk in and simmer for 5 to ten minutes.
