String Bean Coconut Curry

serves 4
Ingredients
165 ml of coconut milk
50g string beans
1 tsp black mustard seeds
1 tsp cumin seeds
half a large finely chopped white onion
1 clove of finely chopped garlic
1 large chopped tomato
1 tsp curry powder
1 tsp of chopped green chilli ( you can adjust the amount depending on you spice level )
10. 1 tsp of ground coriander
11. a few sprigs of fresh coriander ( optional )
Method
Fry the onions, cumin seeds, mustard seeds and chilli until the onion turns translucent.
Add in the chopped tomatoes, string beans and the ground coriander stir well and let it simmer for about 3 to 4 minutes.
Add the coconut milk in and simmer for 5 to ten minutes.
